Port & Sherry
Port is a fortified wine made in Portugal’s Douro Valley that’s usually served as a dessert wine. Port is known for its sweetness and is most commonly red, however dry, semi-dry and white varieties are out there. The addition of a neutral grain spirit gives port its characteristic kick.
Sherry is a fortified wine that comes from Andalusia, Spain, made from predominantly white grapes.
Believed to stimulate the appetite, sherry is commonly taken before a meal as an aperitif. Depending on the grapes from which it’s made and how it’s aged, sherry comes in a few varieties:
- Fino is dry and pale
- Manzanilla is lighter and more refreshing
- Amontillado is exposed to oxygen during the ageing process to darken the colour and develop the flavour
- Oloroso is also exposed to oxygen and aged for considerably longer than other types of sherry, giving it a more intense flavour profile, a higher alcohol content and darker colour
- Palo Cortado is similar to Oloroso, but somewhat lighter
- Cream is a blend of several different types of sherries to create a smooth, mellow flavour and texture.
